Spring Wedding
This was the perfect menu for a countryside wedding. The smell of the meat cooking whetted the appetites, and when guests were called to the tables they seated themselves in record time!
On the barbecue:
- Grilled spice rubbed rump of beef
- Smoky Moroccan chicken skewers
- Lamb & mint burgers with minty Greek yogurt (pictured)
- Grilled halloumi with roasted peppers (V)
Accompaniments:
- Mixed baby leaves with strawberries & a fruit vinaigrette
- Jewelled couscous with pomegranate seeds
- Lemony chick pea, red pepper and feta salad with parsley & coriander
- Puy lentil, roasted pepper, sun-dried tomato & parsley salad
- Artisan breads & butter
Dessert:
- Baked New York style lime & ginger cheesecake
- Chocolate cream tartlets with local strawberries
